Meal Plan Monday

Alright, I'm back at it! Mike and I sat down to do our budget yesterday and from last month's spending I can really tell that meal planning has paid off! As listed in one of the comments from my last meal planning post, there is a group of women (I'm guessing mostly women!) that share their menu plans every Monday. I'm not joining in with them as I feel I have too much personal information here but feel free to check them out!

Meal Plan Monday Group

Monday: Tequila Lime Chicken, Potato Salad, & Lettuce Salad
Tuesday: Brats, Baked Beans & Lettuce Salad
Wednesday: Slow Cooker Roast Beef, Potatoes, & Carrots
Thursday: Salmon, Orange Cilantro Rice & Basil Garlic Green Beans
Friday: Beef tacos, Refried Black Beans, Chips & Salsa (okay, so it's not very "all-American" for Independence Day but I'm going to need to use up the left over roast beef some way!)

Off to the first day of swimming lessons!

So where do you factor in leftovers? Lunches? Just curious.

Mike and I usually have leftovers the next day for lunch. The kids usually have something like pb&j, turkey & cheese sandwiches, mac'n cheese for lunch. We try to always include a veggie or fruit with all meals. Leftovers from Thursday or Friday will usually work sometime on the weekends. We tend to eat out lunch on both Saturday & Sunday ;)

Looks Good!! Salmon?? Not for me. Unless you make it differently than my mom did.
